My kids LOVE taco night! They enjoy taking the different ingredients from the table to make their own creations and always clean their plate.
Tacos typically aren’t considered a health food though. Visions of tons of cheese, greasy beef and sour cream always come to mind.
My taco nights are not like that though. I sautéed grass fed organic beef and mix it with soy free seasoning.
I buy organic taco shells with non GMO corn and our toppings are: fresh guacamole, fresh salsa and pico de gallo, organic lettuce, organic mild jalapeños and a slice of organic cheese for each child.
Not too bad huh?
I take my “taco” a bit further and avoid the shell, piling the meat and toppings onto a huge plate of lettuce!
Delish and one of my favorite meals that I look forward to every week now too!
